Does anyone know if there's a way to change those values?

Not a proper answer to your question, but an end run: you could switch to a different virtual keyboard, e.g.:

https://jack-keyboard.sourceforge.net/

Routing the output from jack-keyboard to Hydrogen is left as a exercise for the student. :)

Not yet. But it will be possible to customize all keybinding in version 1.3.0 (which will most probably take at least a couple of months till it's ready).

If you are adventurous, though, you could use a build from the current master branch (note: artifact was created in an automated build pipeline and expires end of Nov. 2023). The custom keybindings are already implemented and considered done.
