Hi. I'm trying to buid a portable piano based rig. I was thinking having a midi controller and some linux app playing samples in a notebook.
My concern is the latency. Are there any soft with a decent piano sound with a very low latency?

I'd suggest investigating https://www.pianoteq.com/.
Though not free software, it's without a question (IMO) the best piano emulation available on linux.
Low latency ought to be possible, though you might have to configure your system a little bit, depending on what hardware/distro you use, and the desired latency.

Latency is ok for live performance with jackd running at "-n 2 -p 128". If you have a fast PC then "-n 2 -p 64" will reduce latency even more. Try wich sample rate works best with your interface: 48000 or 44100

Also try Mats Helgesson's Maestro Concert Grand. You can easily load it with Carla or LinuxSampler. As for latency, I think that is mostly dependent on your midi interface and configuration of buffer size and sample rate.

Latency relies mostly on your audio interface. If you can achieve low latency, then you just choose what sound piano you may like between a sound bank (sfz, sf2) or Pianoteq.
