Analog to MIDI?

I'm playing around with a contact mic and want to generate MIDI notes based on the inputs, so I can convert it to cool synths. What's the easiest way to do this?

Easiest way is to get dedicated guitar synth like Roland GR-55 or something similar.

Thank you to the replies!

After experimenting abit it turns out that Aubio works the best. I should probably have said that the contact mic is not connected to any kind of guitar but mounted in various places around a room, to pick-up vibrations. I had a hard time to get guitarix and rakarack to work, maybe because there are no real notes being played. Just vibration of movement.
