What substances should be used on various guitars for cleaning, shine, and maint?

On acoustic guitars I simply use the Ernie Ball guitar polish. Sold with a cloth. Works fine.

Does Polish clean and does it "protect"?

I don't know about guitars, but some of my family members play violin and viola. From what I have read, some people that play these instruments insist that nothing be used except for a microfiber cloth. You might consider what are you trying to protect your instrument from?

For the fretboard I use Dr Ducks Ax Wax.

I tend to do more dusting than cleaning per se. I just use a nice soft chamois cloth on the body of the guitar. I have come to like using GHS Fast Fret for string cleaning and general fretboard maintenance.

+1 for Dr Ducks Ax Wax - for pretty much all the guitar.

For the strings, I'm overusing this:

(works particularly well to extend the life of ernie ball slinkys)
