My interest is with baroque music. I'm an amateur musician and have been building historic keyboard instruments: harpsichords and a clavichord. My next project is building a Virtual Pipe Organ (VPO) based on Grandorgue on Linux (Ubuntu Studio?). I have some limited Linux knowledge. So I'll probably need help and guidance with Linux, SW and HW, midi, etc.

Looking forward to learn a lot.

Welcome!
I do not understand if you goal is to get a Linux system running with Grandorgue, or to build a similar pipe organ from scratch.
If you are new to Linux, I would imagine that installing Ubuntu Studio on a reasonably modern computer and getting midi, JACK and a synth working would be enough to keep you busy until 2019.
