I don't know of anything that will do (b), but Ardour will easily do the rest. Ardour does have some LUA scripting ability which might accommodate (b), but I think the hard part will be picking up recording again without missing the beginning of the new signal.

You will likely have better luck using the SFZ version of Sonatina. Download the latest release, get sfizz or some other plugin that can play SFZ sampled instruments, and then you can try out the choir SFZ files.

If that's your only problem with the Salamander, you could EQ it a little bit and tame the highs by a few decibels.
