This is really a good thing. I actually use KXstudio, but I have tried Tango and it's very good and carefully crafted. Leaving Ubuntu for Debian is certainly the right path : less bells and whistles, less dayly useless updates, stability improved.

Three octaves keyboards are not so common, you find more easily 25 or 49 keys. I can contribute for a Samson Graphite 25.

I did not do any wine packaging for debian yet. It's really not a priority to me right now (far from it). But since you're asking I may do a wine-rt (1.6.1) package, is that version good enough?
