Even just having transport controls to hand will make life easier. To be very honest, I actually use the nanoKONTROL for this sole purpose atm. And I assigned the other buttons for muting and soloing tracks. I barely use the faders and knobs. I think I've done the opposite :) I haven't yet bothered...

I think it's a little of both :) What quantizing with a percentage in Rosegarden (and commercial DAWs) does quantize the notes, but instead of snapping them straight to the beat, it moves them only part of the way there. Think of what Qtractor does now as 100% quantization -- it takes the notes, and...

This is just a guess, but is your patch in AMS set up to be velocity-sensitive? I'm not overly familiar with AMS, but most modular synthesis systems require you to explicitly patch in things like velocity sensitivity.
