Bitwig's JACK support is only for audio. For MIDI, Bitwig still uses ALSA MIDI devices directly and exclusively, i.e. you can't use a device while Bitwig is using it. I suggest you use Windows if you want to shrink its own partition, and then the Ubuntu installer for the rest (manual option).
There are reports of Windows not wanting to boot up after its partition was shrunk with Linux. I'm not sure if this is still the case, but it is unnecessary to risk it.

How are you checking for MIDI events in Mixbus? Perhaps try to connect two instances of jack-keyboard together. When you press a note on one of them, you'll see the corresponding note pressed on the other. If this does not work, something strange is up. Maybe restart the Jack server? If this works, ...

This notice on the latest Carla / JACK2 update might explain what you experienced. Jack server restart (or PC restart) is required after latest update.

I don't know a lot (arguably anything) about drums, but I have found that, for me, it works best just programming drums using MIDI in Ardour (would be similar in Mixbus). Start with bass and kick to get basic rythm/feel, then add repeating highhat to keep tempo, and there you have a very basic groov...

Sounds like you want to fake MPE (MIDI Polyphonic Expression), where each note can have its own pitchbend independent from other notes? Your track type is possibly a MIDI+Audio track. Ensure that you create a MIDI only track.
