I think I tried it at some point but It was crashing so I didn't get far with it. I might have to try again, that does sound very really good and clearly very flexible/mixable.

It would certainly/technically affect the functioning and sound but whether to a degree that you would notice is anyone's guess. I wouldn't buy them myself and if you do then I hope you get a significant discount because of it.

Pipewire is not really connected to getting windows vsts working so don't worry about that for now.
Just use yabridge, there's excellent documentation on how to install and use it - https://github.com/robbert-vdh/yabridge
